Almond Flour Chocolate Chip Cookies

Recipe Yields: 14 servings

Ingredients

  •  2 cups almond flour
  •  1/4 cup coconut sugar
  •  1/2 teaspoon baking soda
  •  1 teaspoon Himalayan pink salt
  •  1/4 cup water
  •  1/3 cup canola oil
  •  1/4 cup dark chocolate chips
  •  1/2 cup walnuts, chopped
  •  Additional 1/2 cup chocolate chips (optional)

Directions

  1.  Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2.  Place the almond flour, coconut sugar, baking soda and salt in a bowl and stir. Add the water and canola oil, and stir until dough forms.
  3.  Add chocolate chips and walnuts and spoon 1 tablespoon balls onto a cookie sheet.
  4.  Gently press balls of cookie dough down and bake for about 12-15 minutes. Allow to cool.
