Portobello Wrap

Mushrooms are low in calories, fat, and sodium, cholesterol-free. They're also a good source of many vitamins and minerals, including potassium, copper, selenium, riboflavin, and niacin.

Ingredients
  • 1 clove garlic, chopped
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1T olive oil
  • 4 portabello mushrooms, stems and gills removed
  • 1/2 cup roasted red peppers
  • 1/2 cup chopped tomato
  • 1/4 cup reduced fat feta cheese
  • 1/2 t. oregano
  • 1T red wine vinegar
  • 2T chopped olives
  • 2 cups mixed salad greens
  • 4 whole-wheat tortillas
Directions
  1. Mix together garlic, olive oil, salt and pepper
  2. Arrange mushroom caps on baking sheet and drizzle with oil mixture
  3. Bake at 350 degrees for 15-20min.
  4. Allow mushrooms to cool and slice lengthwise
  5. Mix together red peppers, tomatoes, feta cheese, vinegar, oregano and olives
To Assemble the Wrap

Fill 1 tortilla with:

  • 1/4 of slices mushrooms
  • 1/4 of tomato/pepper/cheese mixture
  • 1/2 cup mixed greens

Yields = 4 wraps; Serving Size = 1 wrap
