Portobello Wrap
Mushrooms are low in calories, fat, and sodium, cholesterol-free. They're also a good source of many vitamins and minerals, including potassium, copper, selenium, riboflavin, and niacin.
Ingredients
- 1 clove garlic, chopped
- 1/2 t. salt
- 1/2 t. pepper
- 1T olive oil
- 4 portabello mushrooms, stems and gills removed
- 1/2 cup roasted red peppers
- 1/2 cup chopped tomato
- 1/4 cup reduced fat feta cheese
- 1/2 t. oregano
- 1T red wine vinegar
- 2T chopped olives
- 2 cups mixed salad greens
- 4 whole-wheat tortillas
Directions
- Mix together garlic, olive oil, salt and pepper
- Arrange mushroom caps on baking sheet and drizzle with oil mixture
- Bake at 350 degrees for 15-20min.
- Allow mushrooms to cool and slice lengthwise
- Mix together red peppers, tomatoes, feta cheese, vinegar, oregano and olives
To Assemble the Wrap
Fill 1 tortilla with:
- 1/4 of slices mushrooms
- 1/4 of tomato/pepper/cheese mixture
- 1/2 cup mixed greens
Yields = 4 wraps; Serving Size = 1 wrap
