Tofu Breakfast Burritos
It is important to eat a balanced breakfast as your body needs adequate fuel to get started in the morning. Get on track with this hearty recipe - which jump starts your day with protein, calcium, iron, and fiber. Tofu is a great meat alternative as it is a good source of protein but is in low fat and has no cholesterol. The significant amount of protein and fiber in this recipe will also keep you full and satisfied longer. This burrito can be a delicious choice for lunch or dinner too!
Recipe Yield: 4 burritos
Ingredients
- 1 tsp olive oil
- 1/4 cup scallions, chopped
- 1/4 cup peppers, chopped
- 1/4 cup black beans
- 1/4 cup tomatoes, chopped
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 14 ounces extra-firm tofu
- 4 whole wheat tortillas
- 1/4 cup low fat cheddar, shredded
- 1 tbsp cilantro
- Slices of lime
Directions
- Heat the oil in a large skillet over medium heat. Add the peppers and scallions and sauté until tender.
- Crumble the tofu into the skillet; then add beans and spices. Stir until warm.
- Add the tomatoes and cilantro.
- Place tortilla on flat surface. Scoop 3/4 tofu mixture onto the middle of the tortilla and top with cheese; then wrap into burrito.
- Serve hot, garnish with sliced lime.
