Flank Steak, Spinach & Goat Cheese Wrap

This easy and delicious recipe provides 20% of daily required iron from the spinach and lean steak. If you add an orange for dessert the vitamin C will aid in iron absorption!

Ingredients
  • 1/4 cup lemon juice
  • 3 tablespoons Dijon mustard
  • 3 tablespoons Worcestershire sauce
  • 3 garlic cloves, minced
  • 1/2 teaspoon hot sauce
  • 24 oz. beef flank steak
  • 8 whole wheat wraps
  • 1 cup of softened goat cheese
  • 4 cups of baby spinach
Directions
  1. Combine lemon juice, Dijon mustard, Worcestershire sauce, garlic, and hot sauce in a large bowl.
  2. Score the surface of the flank steak with a sharp knife.
  3. Add steak to marinade, cover with plastic, and refrigerate overnight.
  4. Place steak in broiler and cook until the internal temperature reaches 140 degrees.
  5. Remove from heat, rest for 5 minutes, and slice thinly against the grain into 3 oz portions.
  6. Spread 2 tablespoons of goat cheese on a whole wheat wrap.
  7. Place 3 oz of flank steak and % cup of baby spinach on the wrap and roll up to serve.

Yields = 8 wraps; Serving Size = 1 wrap
