Spinach Salad
Dark Leafy Greens such as spinach and kale can contain more calcium per ounce than milk!
Ingredients
- 3 cups Fresh Spinach Leaves
- 1/2 cup Kidney Beans (drained & rinsed)
- 2 tablespoons Shredded Carrots
- 5 Cherry Tomatoes
- 5 Broccoli Florets
- 2 tablespoons Red Peppers (chopped)
- 2 teaspoons Sliced Almonds
- 1 tablespoon Gorgonzola Cheese
- 2 tablespoons Balsamic Vinaigrette
Directions
- In a large bowl, combine spinach leaves, beans, red peppers, carrots, broccoli, and tomatoes.
- Pour balsamic vinaigrette dressing over salad; mix well. Sprinkle on sliced almonds and gorgonzola cheese.
