Spinach Salad

Dark Leafy Greens such as spinach and kale can contain more calcium per ounce than milk!

Ingredients
  • 3 cups Fresh Spinach Leaves
  • 1/2 cup Kidney Beans (drained & rinsed)
  • 2 tablespoons Shredded Carrots
  • 5 Cherry Tomatoes
  • 5 Broccoli Florets
  • 2 tablespoons Red Peppers (chopped)
  • 2 teaspoons Sliced Almonds
  • 1 tablespoon Gorgonzola Cheese
  • 2 tablespoons Balsamic Vinaigrette
Directions
  1. In a large bowl, combine spinach leaves, beans, red peppers, carrots, broccoli, and tomatoes.
  2. Pour balsamic vinaigrette dressing over salad; mix well. Sprinkle on sliced almonds and gorgonzola cheese.
